Notella


It’s as easy as throwing a few things in your food processor to create something as delicious as Nutella, or possibly even more tasty. And without the loads of refined sugar, inflammatory oils, palm oil and dairy.
Which is why I shall call it NOTELLA!
My real ingredient version is still a treat but actually provides some nutrition, healthy fats and fibre from real nuts and some minerals from cacao and high quality dark chocolate. This is a shelf stable spread which makes a really nice gift to friends and family around the holidays.
Fabulous on toast, crepes, my banana oat blender pancakes, off the spoon. Can also be used in other desserts, added to smoothies, or turned into icing.

YOU’LL NEED


2 cups raw hazelnuts
1 cup raw cashews (this addition makes it way more smooth)
125 grams or 1/2 c of dark chocolate - you can use dark chocolate chips or chop up your fave plain chocolate bar, i like to use

for a lower sugar option I suggest

1/2 tsp sea salt
1/4 c cacao powder
1/4 c coconut sugar
1 tsp vanilla extract
2-3 tbsp coconut oil or avocado oil - this is to keep it smoother and more spreadable, as real Nutella would be

METHOD

1. FIRST you must toast your hazelnuts for fresh toasty flavour and peeling. Spread your hazelnuts on a baking sheet and bake at 325 for 12-15 minutes. Cool your hot nuts for 5-10 minutes until they reach a handleable temperature, then pile them into the middle of a large clean, dry dish towel, shake it around to get the skins off, remove skins.

2. In a high powered food processor add your peeled hazelnuts and blend until they turn into a smooth butter, add cashews and blend again until very smooth, then add in your remaining ingredients, blend for as long as it takes to melt chocolate and create a very smooth spread.

3. Give your Notella spread a taste before storing, you may decide you would like it sweetened more or to add more cacao. If the spread is too thick add a little more oil.

4. Store in clean sealable glass jars. Should keep at room temperature for up to 3-4 weeks. Will keep longer refrigerated but will become stiffer when cooled.
