Sunny Tom Kale
Sunny Tom (Sun-dried Tomato) Kale!
Ingredients:
1 very large bunch of kale (any kind you like should do) de stemmed and roughly chopped or torn
1 small shallot sliced up real nice
2 or more freshly minced garlic cloves
3-5 sun dried tomatoes (I use the kind packed in olive oil, if you use the dried kind you will need to soak them prior to cooking)
2 tbsp of caper berries
3-4 tbsp vegetable broth, chicken broth or water
1 tbsp olive oil, you can use the oil from your sun dried tomatoes if ya like
Salt and Pepper to taste (less salt if your broth be salty)
Method:
1 First steam your kale covered in a small sauce pan with the broth/water until kale leaves are wilted but not totally done.
2 In a separate heated cast iron skilled sauté your shallot in the oil on low for 2 minutes, then add your garlic, capers, sun-dried tomatoes. Toss these all up together for 1 minute or so more until the garlic is fragrant but never burnt.
3 Add your kale into everything, sauté another 2-5 minutes depending on the kale you use and your preference for cooked greens.
4 Once cooked to your liking, season with salt and pepper to taste.
5 Get your kaley goodness and all the little bits of flavour bombs into a serving dish before you drizzle with about 1/2 - 1 tbsp balsamic vinegar (you could also try ACV or fresh lemon Juice for more of a tangy vibe)
Voila!
Goes nicely with any savoury dinner, pasta, fish, meat etc.
If you want a way simpler kale recipe skip everything except the kale, oil, broth/water, garlic and you can use the same methods.
